This recipe for the Pheasant Soup comes from a website.  When we get the address, we will cite it here.

Say what you want about chili, there's no better cold weather meal and if there's better fare for a Super Bowl party or any ballgame, I haven't found it!  The good news is that this is the best chili I've ever tasted.  This is a WHITE chili.  This recipe makes about 8 quarts - enough to serve a pretty good sized group.

INGREDIENTS

1/2 cup olive oil
4 - 15 oz cans Cannelini beans (white kidney beans)
1 - 15 oz can kidney beans
3 bell peppers - 1 each: red, yellow, orange, diced
2 large diced onions
3 dried ancho peppers - rehydrated and diced (if you can find them)
1/4 cup chopped garlic
1/2 cup sliced celery
2 quarts chicken stock
1 pint whole whipping cream
1 1/2 cups flour
2 pheasant breasts, cubed
2 fresh bay leaves
1 1/2 Tbsp chili powder
1 1/2 Tbsp cumin
salt and white pepper to taste

Nacho chips and fresh cilantro

PREPARATION

Heat a stock pot until very hot, then add olive oil and pheasant - brown quickly.  Add cumin and chili powder, cook a minute or two, then add garlic.  Add peppers, onion, and celery - stir.  Add bay leaves, flour and stir some more.  Add chicken stock, beans, and whipping cream - stir.  Add the ancho chili (or not) and simmer for 45 minutes.  Add salt and white pepper to taste.

Serve w/nacho chips and bit of cilantro!

 

Swedish Meat Balls (venison)

2 lb. ground venison
1 lb. hamburger
1 pkg dry onion soup
1 pkg frozen chopped spinach, thawed and squeezed dry
8 oz. pkg grated cheddar cheese

Mix together and form into walnut sized balls.  Place on cookie sheet (with sides).  Bake at 375 degrees for about 10 minutes or until done.  Freezes well.

When ready to serve, combine cream of mushroom soup and sour cream for sauce.

Regular meat balls are fixed the same except leave out spinach and cheese.  Serve these with barbecue sauce.

Makes about 100 small meat balls or about one crock pot.

 

Pecan/Cranberry Crunch Recipe

We tasted this recipe in Green Bay and they gave us the recipe and people still ask for it so here it is.  We love the slightly sweet taste and the fact it is so easy to make.

In a 9x13 pan, mix:
1-16 oz box of Cinnamon flavored Quaker Oats Squares
1 cup dried cherries (or berries or cranberries or whatever you want-we love craisins)
1 cup coarsely chopped pecans

Microwave for 1 minute:
3 Tbsp butter
1/3 cup brown sugar
1/3 cup light corn syrup

Stir and microwave syrup for 30 seconds more.

Add 1 tsp vanilla and 1/2 tsp baking soda.  Mix as it foams.

Pour over cereal mixture and bake at 250 degrees for 1 hour - stirring every 15 minutes.

Pour onto cookie sheet and cool completely.
